I know that projectors don’t project black, but the areas that are "black" must be being illuminated somehow, because I have a shadow on the screen when I stand in front of them. Why does the projector illuminate this area? Why not just not project that pixel? I’m specifically talking about LCD projectors. Can’t it just turn off those pixels for that frame?

No, you can’t just turn off the pixel, because the light doesn’t come from the pixel. It’s one really bright light, and the pixels let more or less of that light through, and an LCD pixel even when closed cannot obscure all the light. You see it as black when projected, because your eye adjusts for the difference i contrast, and relative to the bright pixels, it appears dark.
